Restaurants and retail grocers play an important role within our local food system, offering consumers a consistent location to purchase local products on a daily basis and offering a crucial sales outlet for local growers. Due to the preferred convenience of one-stop shopping, a majority of people continue to purchase their food at grocery stores and supermarkets, but are now asking for locally and organically grown produce. In response to this demand, retail markets are increasingly willing to source produce from local growers. Restaurants are following a similar trend; the desire of chefs for the best possible ingredients and consumer demand are creating an increasingly viable sales outlet for local growers.
