| New Potato and Wilted Arugula Salad |
| Steam or boil potatoes until just tender, cut into bite sized pieces. In a skillet heat some olive oil with chopped garlic, and chives or scallions. Throw in potatoes and a bit of salt, cook for a few minutes. Finally, toss in the arugula, some fresh pepper and a bit of balsamic or red wine vinegar to taste. Enjoy! |
